Since my last post, I have gotten settled into my new apartment here in Cicero, been back to Pennsylvania for a wonderful visit with family and friends, gone on CEF's "Ignite" winter retreat as staff, and finally, I've been doing a lot of cooking and baking (which is really what this post is all about).
After we got back from our lovely Pennsylvania getaway, I was biting at the bit to get back into my kitchen! After my few weeks of cooking withdrawal I was feeling very adventurous and decided to go all out and do some gourmet cooking. My first endeavor turned into Chicken Piccata and Panzanella Caprese: D-E-L-I-C-I-O-U-S! I usually stray from original recipes if I don't have exact ingredients, so the Panzanella Caprese was slightly different when I made it because I didn't have fresh mozzarella. I ended up just using grated mozzarella which worked just as well.
I'm pretty sure I followed the recipe for Chicken Piccata exactly the way they had it. It was so good! The strongest flavor was the capers-something I had never tasted before. Unfortunately I am unable to upload a picture of my wonderful meal at the moment, so the pictures given to you by the links will have to do for now(They look a lot better than mine anyway). Now I must end here because I am off to the kitchen to make some meatloaf cupcakes-so you can be sure another post will follow!
